Ingredients:

  • 1⁄2 cup roasted garlic*
  • 1⁄2 cup pitted green olives
  • 1⁄2 cup pitted Kalamata olives
  • 3 teaspoons fresh lemon juice
  • 1 tablespoon olive oil

Serves twelve people.

Instructions:

  1. * To roast garlic, place 3 whole unpeeled garlic heads in a shallow pan and bake at 350 degrees for 40 minutes or until soft.
  2. Let cool, then peel and mash.
  3. Puree garlic, lemon juice, and olive oil.
  4. Add minced olives and mix well.
  5. Refrigerate.
