Ingredients:
- 1 cup black beans
- 1 peeled lime, segmented and cut into small pieces
- 1 medium tomato, seeded and diced
- 1⁄2 medium onion, diced
- 1 tablespoon balsamic vinegar
- 2 cloves garlic, minced
- 1 cup fresh cilantro, chopped
- 1 tablespoon flaxseed oil
- 1⁄4 teaspoon salt
Serves eight people.
Instructions:
- Mix all ingredients together.
- Refrigerate 4–6 hours.
- Serve over fish, beef, or chicken.
- Leftovers may be frozen.
