Ingredients:

  • 1 cup black beans
  • 1 peeled lime, segmented and cut into small pieces
  • 1 medium tomato, seeded and diced
  • 1⁄2 medium onion, diced
  • 1 tablespoon balsamic vinegar
  • 2 cloves garlic, minced
  • 1 cup fresh cilantro, chopped
  • 1 tablespoon flaxseed oil
  • 1⁄4 teaspoon salt

Serves eight people.

Instructions:

  1. Mix all ingredients together.
  2. Refrigerate 4–6 hours.
  3. Serve over fish, beef, or chicken.
  4. Leftovers may be frozen.
