Ingredients:

  • 2 medium cucumbers, peeled and thinly sliced
  • Salt and pepper to taste
  • 4 tablespoons Greek-style yogurt
  • 1 teaspoon red wine vinegar
  • 2 tablespoons onion, minced
  • 1 tablespoon chopped dill

Serves four people.

Instructions:

  1. In colander, generously salt cucumber slices and let drain approximately 1 hour.
  2. In large bowl, combine remaining ingredients and mix well.
  3. Add cucumbers.
  4. Add salt and pepper, and serve.
