Ingredients:
- 1 tablespoon olive oil
- 1 clove garlic, minced
- 1 small onion, chopped
- 1⁄2 tablespoon cumin
- 1 teaspoon dried oregano
- 1⁄2 teaspoon chili powder
- 1⁄2 pound ground turkey, browned, or 11⁄2 cups cooked turkey, shredded
- One 14-ounce can black beans, rinsed and drained
- 1 very large tomato, chopped
- Salt and pepper to taste
Serves two people.
Instructions:
- In a medium saucepan, heat olive oil over medium heat.
- Add garlic and onion, stirring frequently until translucent.
- Add spices and stir well.
- Mix in turkey, beans, and tomato, and cook for an additional 10 to 12 minutes or until heated through.
- Season with salt and pepper.
