Ingredients:

  • 1 tablespoon olive oil
  • 1 clove garlic, minced
  • 1 small onion, chopped
  • 1⁄2 tablespoon cumin
  • 1 teaspoon dried oregano
  • 1⁄2 teaspoon chili powder
  • 1⁄2 pound ground turkey, browned, or 11⁄2 cups cooked turkey, shredded
  • One 14-ounce can black beans, rinsed and drained
  • 1 very large tomato, chopped
  • Salt and pepper to taste

Serves two people.

Instructions:

  1. In a medium saucepan, heat olive oil over medium heat.
  2. Add garlic and onion, stirring frequently until translucent.
  3. Add spices and stir well.
  4. Mix in turkey, beans, and tomato, and cook for an additional 10 to 12 minutes or until heated through.
  5. Season with salt and pepper.
