Ingredients:
- 1⁄2 cup roasted garlic*
- 1⁄2 cup pitted green olives
- 1⁄2 cup pitted Kalamata olives
- 3 teaspoons fresh lemon juice
- 1 tablespoon olive oil
Serves twelve people.
Instructions:
- * To roast garlic, place 3 whole unpeeled garlic heads in a shallow pan and bake at 350 degrees for 40 minutes or until soft.
- Let cool, then peel and mash.
- Puree garlic, lemon juice, and olive oil.
- Add minced olives and mix well.
- Refrigerate.
